The bananas in the cookies deliver on flavour and potassium, the oats will supply magnesium. Both minerals that help with a restful sleep. Serves: 8 Prep Time: 20 mins Cook Time: 15 mins
1 medium sized ripe banana (mashed)
100g gluten free oats
2 tsp honey (maple syrup – if vegan)
1 tbsp Coconut oil (Soft or melted)
Pinch of salt
Preheat the oven at 170 or (gas mark 3)
Place the mashed banana in a medium bowl and add the oats, honey (or maple syrup) coconut oil and pinch of salt. Mix together until combined.
Leave aside for about 10 mins so that the oats can soak up some of the wet ingredients.
Place a piece of oven paper onto to a baking tray.
Take a teaspoon of the mixture and roll into a ball shape and then flatten it down to (about 1cm thick) placing it on the prepared baking tray. Do the same for the rest of the mixture.
Cook in the oven for about 15 mins – keep a check on them at about 10 mins in.
When they are just turning golden – place them on a cooling rack.
This is the best bit – enjoy whilst warm and bendy, or wait to fully cool and place them in a storage jar for another day.
